Healthy Roasted Brussel Sprouts with Pesto

Roasted Brussel Sprouts

Roasted Brussel Sprouts are my favorite.

So we all have certain foods that we associate with our family.   My Dad always loved brussel sprouts, and my Mom received copious compliments when brussel sprouts hit our family table.  I can’t help but continue the tradition, and it is true that my family loves them and always eats at least a pound or more.   I have to always stock up on these little jewels.

This recipe includes a great sauce– rich and tangy vegan pesto— so make sure to check it out and have it prepared beforehand.  This recipe goes great with a Perfect Pot of Beans and roasted potatoes or sweet potatoes to make a complete meal.   



  1. Preheat oven to 400 degrees.
  2. Lay out the brussel sprouts in a single layer on a large baking sheet.  I like to spray the pan before I lay the vegetables down, and then I spray once they are arranged on the sheet.  Bake for 20 to 25 minutes.
  3.  Make the pesto while the brussel sprouts are baking.
  4. Once the brussel sprouts are done, transfer them to a bowl and coat with the pesto sauce.

Seriously, it's that simple.

I have a lot to accomplish every day, as so many of us do, and I want a simple and healthy portfolio of recipes that I can count on.   This one does the trick.  My kids like to eat flavorful recipes, and it is awesome that this one is so healthy too.  Roasted brussel sprouts are a treat in our family.   And what is remarkable is how easy they are to make.

Don’t let the addition of another recipe scare you away from this one.   It is very simple and the pesto sauce is really versatile and can be used in so many other dishes, so it’s great to have on hand. 

I’ll be honest.   I can just eat these as a complete meal.   Here’s my bowl, along with some fruit or a salad.   It’s all I need.  Many of you already know, they are really a superfood.   They can be prepared in so many ways, and the basil pesto really brings out their flavors.   I hope you enjoy this recipe and pair these brussel sprouts with some other beautiful, healthy options.
