This dressing complements a beet salad recipe I have in the library, but it is so delicious I suggest using it on the salad of your choice. Enjoy this light, summery dressing. It is super simple and just wonderful.
Honey Tarragon Dressing
- Juice of one lemon
- 1 tablespoon honey
- 1/2 teaspoon minced tarragon
- 1/2 teaspoon minced chives
- 1/4 cup cold pressed avocado or olive oil
- himalayan salt and pepper to taste
- bowl and wire whisk
Combine all ingredients in a small bowl except the oil. Drizzle the oil while whisking to emulsify. Then simply enjoy on the companion recipe-- roasted beet salad-- or on any salad of your choosing.
