Healthy Pistachio Dijon Salad Dressing

Pistachio Dijon Salad Dressing Rocks! This salad dressing is so delicious and it is really hearty and filling.   Did you know that adding fats to your salad increases vitamin absorbency?   I always add a healthy nut based dressing to my salads.   They add much more nutrition than oils, and they are more filling too.   

This recipe is a little different than most, and the pistachio nutmeats can be a little tricky to find, and here is a link to a product on Amazon if you wish, but do your own homework and shop around for these.   They are worth the price and make a really bang-up tasty salad dressing!

The other important thing here is you will need a high speed blender to really get the consistency and blending that this recipe requires, so make sure you have your blender out and ready for this one.

Ingredients for the salad dressing:

  • 1/3 cup of raw pistachios
  • 1 Tablespoon Dijon Mustard
  • 2 teaspoons of low salt seasoning
  • Juice of 1/2 lemon
  • 1/2 cup of unsweetened lemon juice

To prepare, simply add all ingredients to your high speed blender, and you are ready to add to your salad.  It’s really that simple.
